Book excerpt: Abstract: The objective of this study was to assess the National Organic Program's newly implemented food labeling program and to estimate consumer willingness to pay for multi-ingredient processed organic foods. The new program specifically helped clarify how processed foods would be labeled for organic content. This study obtains information concerning consumers' preferences and knowledge of processed organic foods. It also identifies those consumers most likely to purchase processed organic foods.
